This tastey toasted muesli uses heaps of healthy co-op ingredients. It's really filling and will get your day off to a great start.
Ingredients
- 3 ½ cups rolled oats
- ¾ cup almonds
- ½ cup pecans, chopped
- ½ cup coconut flakes
- 2 tablespoons sesame seeds
- 2 tablespoons pepitas (green pumpkin seeds without the shell)
- 1 teaspoon lemon zest, chopped
- 1/3 cup olive oil
- ½ cup honey or rice malt
- 2 cups mixed dried fruit (e.g. Chopped figs, raisins, chopped apricots, sultanas)
Directions
Preheat oven to 180 degrees.
Mix oats, nuts, seeds, coconut & zest.
Warm oil & honey over a gentle heat.
Pour honey mixture over oat mixture and stir thoroughly.
Tip mixture into a baking tray & bake.
Stir every 5 minutes or so until golden.
It will probably take 20-30 minutes.
Let the mixture cool.
Stir in the dried fruit.
Makes about 8 cups and lasts several months (in the fridge in the tropics).
