Fruity, nutty brown rice salad
A simple, healthy and low GI recipe that's just a little bit different from your usual rice salad

Ingredients

  • 3 handfuls brown rice
  • 1 big handful dried apricots
  • 1 handful walnuts
  • 2 shallots
  • 1 orange
  • dash olive oil
  • dash apple cider vinegar
  • 1 tsp salt

Directions 

Rinse the rice until the water runs clear.  Place in a medium sized saucepan, cover with water to about 3 cm above the height of the rice.  Summer rice by absorption method.  Once cooled, rinse until grains are separated.

Chop apricots, walnuts and shallots and add to hot rice.  Juice the orange, add oil, vinegar and salt.  Pour over salad.  Voila!
