Buckwheat Pancakes
A simple guide of how to prepare yummy gluten free pancakes that everyone will enjoy!
Ingredients
- Buckwheat flour
- water
- oil to cook
Optional:
- 1/2 teaspoon bi-carb
- 1 teaspoon gluten free baking soda
- mashed banana
Directions
- Mix a cup of buckwheat flour (available freshly milled from the co-op) with enough water to form a runny mixture in a vessel that pours well.
- Add optional ingredients if you like a fluffy pancake.
- Add a little oil to a thick based fry-pan and let it heat up.
- When the oil is hot, pour some of the mixture into the pan.
- Cook the first side until bubbles appear and burst. Then turn over to let the other side cook for a minute or so.
- Add a little more oil to cook each pancake.
Makes about 3 or 4 pancakes depending on how big you make them.
Serve with honey (or rice malt), tahini, dessicated coconut, fresh paw paw and a squeeze of lime. Yum!
