Fruity, Nutty Brown Rice Salad
A simple, healthy and low GI recipe that's just a little bit different from your usual rice salad.
Ingredients
- 3 handfuls brown rice
- 1 big handful dried apricots
- 1 handful walnuts
- 2 shallots
- 1 orange
- dash olive oil
- dash apple cider vinegar
- 1 tsp salt

Directions
- Rinse the rice until the water runs clear.
- Place in a medium sized saucepan, cover with water to about 3 cm above the height of the rice.
- Simmer rice by absorption method.
- Once cooled, rinse until grains are separated.
- Chop apricots, walnuts and shallots and add to hot rice.
- Juice the orange, add oil, vinegar and salt.
- Pour over salad. Voila!
